Meatloaf Muffins

Meatloaf Muffins present classic ground beef meatloaf flavors in a convenient individual serving size. Seasoned with onion, garlic, Worcestershire sauce, and spices, the beef mixture is baked in a muffin tin and finished with a caramelized glaze. This format offers a moist, tender interior with a slightly crisp top glazed with a savory-sweet topping.

Description

This recipe uses ground beef mixed with minced onion and garlic, Worcestershire sauce, eggs, breadcrumbs, salt, and pepper to create a well-seasoned meat mixture. The mixture is portioned into muffin tin cups for even, quicker cooking and easier serving. After baking to set, the individual meatloaves are topped with a glaze made from ketchup, brown sugar, yellow mustard, and Worcestershire sauce.

The muffins are then broiled briefly (or baked at high heat) to caramelize the glaze, adding a sticky, flavorful crust contrasting the moist meat within. This technique allows for a rich and balanced flavor profile with familiar meatloaf seasoning in a compact size.

These meatloaf muffins serve well as a quick dinner portion, lunch, or packed meal. Their form offers flexibility without altering traditional meatloaf flavors.
