  • 2 lbs ground beef 85% lean
  • 1 medium onion finely chopped
  • 2 large eggs
  • 3 garlic cloves minced
  • 3/4 cup panko breadcrumbs
  • 1/2 cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce 
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 1/4 cup fresh parsley finely chopped
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 1/2 tsp white vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Preheat oven to 375°F. Grease a loaf pan with nonstick spray.
  2. In a large mixing bowl, combine ground beef, onion, eggs, garlic, panko breadcrumbs, milk, 2 tablespoons ketchup, Worcestershire sauce, Italian seasoning, salt, black pepper, smoked paprika, and parsley. Mix until well combined.
  3. Press the meatloaf mixture into the prepared loaf pan, ensuring the top is even. Bake for 40 minutes.
  4. While the meatloaf bakes, prepare the glaze. In a small bowl, whisk together 1/2 cup ketchup, brown sugar, white vinegar, garlic powder, and onion powder.
  5. After 40 minutes of baking, remove the meatloaf from the oven and spread the glaze evenly over the top. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F.
  6. Let the meatloaf rest for 5-10 minutes before slicing. Serve and enjoy!
