Description
This sandwich begins by broiling buttered bread rolls until the insides are golden and slightly crisp. A homemade meatloaf sauce is prepared by mixing ketchup, light brown sugar, Dijon mustard, and a touch of ground nutmeg, offering a sweet and slightly spiced condiment. The sauce is spread generously on the toasted bread halves, followed by slices of meatloaf and cheese.
After assembling the sandwich base, it returns to the oven under the broiler to melt the cheese over the meatloaf. Adding fresh baby spinach adds mild green freshness and a slight crunch. The sandwich is finished with the top bread piece and can be served with extra sauce for dipping.
Options include using different bread types such as tortilla wraps or lettuce wraps for a low-carb version, plus additional toppings like pickles, jalapeños, or crispy onion straws to customize flavor and texture. Leftover meatloaf can be shaped and stored in advance or frozen by slicing and flash freezing for future sandwiches.
Ingredients
- 8 bread roll like ciabatta or torta, Artisan
- 3 Tablespoon butter
- 8 lices cheese , cheddar, provolone, or Swiss
- 1 cup spinach baby leaves
- 1 recipe meatloaf sliced at least 1 inch thick, cooked, leftover
For the Meatloaf Sauce:
- 1/2 cup ketchup
- 6 Tablespoons light brown sugar
- 2 teaspoons Dijon mustard
- 1/4 teaspoon ground nutmeg
Instructions
- Turn oven to high Broil.
- Make the meatloaf sauce by mixing together the sauce ingredients.
- Butter both insides of the bread roll and place in oven to toast. Remove from oven when edges begin to get golden and then spread a generous layer of meatloaf sauce over the bottom half of bread. Top with a slice of meatloaf and a slice of cheese. Return to oven until cheese is melted.
- Add a handful of spinach and place the top layer of bread. Serve with extra sauce for dipping, if desired.
Notes
- Use tortillas or lettuce wraps as alternative bread choices for variations.
- Add toppings like leftover mashed potatoes, pickles, jalapeños, sautéed onions, mushrooms, crispy onion straws, bacon, lettuce, or tomato for more flavor and texture.
- Prepare meatloaf 1 to 2 days ahead and refrigerate covered until ready to use.
