Mediterranean Breakfast Casserole
Description
The casserole begins by browning Italian chicken sausage in a skillet, followed by the addition of chopped kale which is cooked until wilted. Cherry tomatoes and crumbled feta cheese are layered over the sausage and kale mixture in a casserole dish. Beaten eggs seasoned with sea salt are poured over the ingredients, then gently stirred to distribute everything evenly.
Baked at 375°F, the eggs set firmly and the edges turn golden brown over 32 to 40 minutes. The dish features a combination of savory sausage, earthy kale, fresh bursts of sweet tomato, and the tang of feta cheese, yielding a flavorful and hearty breakfast or brunch option.
This casserole can be sliced and served warm, offering a nutritious and protein-rich start to the day. The choice of sausage and salt amount can be adjusted to taste, and the macro-nutrient content will vary based on the sausage used.
Ingredients
- 1 pound (16-oz) Italian chicken sausage or breakfast sausage of choice, mild
- 1 kale chopped, small head
- 1 cup cherry tomato or grape tomatoes
- 1/2 cup feta cheese crumbled
- 12 large egg beaten
- 3/4 tsp salt to taste, sea salt
Instructions
- Preheat the oven to 375 degrees F.
- Heat a non-stick skillet over medium-high on the stove top and add the chicken sausage. Cook, stirring frequently, until cooked through, about 5 to 8 minutes.
- Add the kale and cover the skillet. Cook until wilted, about 2 to 3 minutes.
- Crack the eggs into a mixing bowl and whisk them until well-beaten. Whisk in the sea salt.
- Transfer the sausage and kale mixture to a lightly oiled (or sprayed) casserole dish and evenly sprinkle the tomatoes and feta cheese over the sausage and kale.
- Pour the beaten eggs over everything and use a cooking spoon to gently stir until it appears as though all ingredients are evenly distributed.
- Bake on the center rack of the preheated oven for 32 to 40 minutes, or until the eggs have set up and the edges of the casserole are golden-brown.
- Allow casserole to cool 10 minutes before slicing and serving.
Notes
- Nutrition varies with the type of sausage; chicken sausage macros differ from pork or other varieties.
- Season salt to taste, adjusting according to the saltiness of your sausage and feta.
