Mediterranean Breakfast Casserole

This Mediterranean Breakfast Casserole blends Italian chicken sausage, kale, cherry tomatoes, crumbled feta cheese, and beaten eggs into a savory baked dish. The sausage is cooked with kale until wilted, then combined with tomatoes and feta in a casserole dish before being covered with seasoned eggs and baked until set. The casserole has a firm, golden-brown edge and a moist, tender interior with Mediterranean flavors from feta and fresh vegetables.

Description

The casserole begins by browning Italian chicken sausage in a skillet, followed by the addition of chopped kale which is cooked until wilted. Cherry tomatoes and crumbled feta cheese are layered over the sausage and kale mixture in a casserole dish. Beaten eggs seasoned with sea salt are poured over the ingredients, then gently stirred to distribute everything evenly.

Baked at 375°F, the eggs set firmly and the edges turn golden brown over 32 to 40 minutes. The dish features a combination of savory sausage, earthy kale, fresh bursts of sweet tomato, and the tang of feta cheese, yielding a flavorful and hearty breakfast or brunch option.

This casserole can be sliced and served warm, offering a nutritious and protein-rich start to the day. The choice of sausage and salt amount can be adjusted to taste, and the macro-nutrient content will vary based on the sausage used.

Ingredients

Servings
  • 1 pound (16-oz) Italian chicken sausage or breakfast sausage of choice, mild
  • 1 kale chopped, small head
  • 1 cup cherry tomato or grape tomatoes
  • 1/2 cup feta cheese crumbled
  • 12 large egg beaten
  • 3/4 tsp salt to taste, sea salt

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Heat a non-stick skillet over medium-high on the stove top and add the chicken sausage. Cook, stirring frequently, until cooked through, about 5 to 8 minutes.
  3. Add the kale and cover the skillet. Cook until wilted, about 2 to 3 minutes.
  4. Crack the eggs into a mixing bowl and whisk them until well-beaten. Whisk in the sea salt.
  5. Transfer the sausage and kale mixture to a lightly oiled (or sprayed) casserole dish and evenly sprinkle the tomatoes and feta cheese over the sausage and kale.
  6. Pour the beaten eggs over everything and use a cooking spoon to gently stir until it appears as though all ingredients are evenly distributed.
  7. Bake on the center rack of the preheated oven for 32 to 40 minutes, or until the eggs have set up and the edges of the casserole are golden-brown.
  8. Allow casserole to cool 10 minutes before slicing and serving.

Notes

  • Nutrition varies with the type of sausage; chicken sausage macros differ from pork or other varieties.
  • Season salt to taste, adjusting according to the saltiness of your sausage and feta.
