Mediterranean Bruschetta Hummus Platter
Description
The platter starts with diced seedless cucumber and fresh tomato tossed optionally with olive oil and vinegar, piled over a bed of creamy hummus. The addition of crumbled feta and fresh herbs adds salty and bright notes, while the balsamic glaze contributes subtle sweetness and acidity. Various dippers such as different styles of hummus, tzatziki, pita wedges or chips, and fresh vegetable sticks enhance the assortment.
The combination offers a range of textures, from smooth hummus and creamy feta to crunchy fresh vegetables, making it suitable for sharing or as a light snack. This platter can be customized by mixing different hummus flavors and adjusting vegetables to preference.

Ingredients
- ½ cup English cucumber seedless, diced
- 1/4-1/2 cup tomato fresh, diced
- 10 oz hummus
- 2 TBSP feta cheese skip for vegan, crumbled
- 1 TBSP parsley or basil, fresh chopped
- 1-2 TBSP balsamic glaze or homemade balsamic reduction, sweet
OPTIONAL EXTRAS:
- red wine vinegar a splash or white wine vinegar
- A drizzle of extra virgin olive oil
- salt a pinch
FOR THE SNACK PLATTER: CHOOSE YOUR FAVORITES!
- hummus roasted garlic, with extra virgin olive oil and paprika
- hummus classic, drizzled with pesto
- tzatziki dip
- pita fresh warmed wedges or pita chips
- carrot sticks
- celery sticks
- cucumber slices
- tomato
- bell pepper sliced
- sweet mini peppers
- Feel free to mix and match different varieties of hummus and any veggies your heart desires!
Instructions
- Dice tomatoes and cucumber and toss with olive oil and vinegar if desired.
- Pile atop a fresh container of hummus and drizzle with balsamic glaze/reduction.
- Top with crumbled feta and fresh parsley.
- Surround your hummus with all your favorite dippers and veggies (see above for suggestions) and any other dips your heart desires! We went with Sabra roasted garlic hummus topped with olive oil and paprika and classic hummus with a swirl of pesto. Deeeeelish!
