Mediterranean Cucumber Tomato Salad

Mediterranean Cucumber Tomato Salad is a fresh combination of diced Roma tomatoes, English cucumber, and chopped parsley, dressed with sumac, lemon juice, and extra virgin olive oil. The salad is lightly seasoned with salt and pepper and benefits from resting briefly to meld flavors. This crisp, tangy salad offers a bright, refreshing taste.

Description

This salad uses diced Roma tomatoes and English cucumber as the main vegetables, combined with fresh parsley and optionally thinly sliced red onion for added sharpness. The dressing features sumac, which imparts a subtle lemony, fruity note, along with freshly squeezed lemon juice and extra virgin olive oil. Seasoned simply with kosher salt and black pepper, the ingredients are gently mixed and left to rest for several minutes to allow the flavors to develop.

The result is a fresh, vibrant salad with crisp texture and a balance of acidity and herbaceousness. It works well as a side dish to Mediterranean or grilled meals, or as a light, hydrating snack.

For best results, prepare shortly before serving and store covered in the refrigerator for up to three days. Allowing the salad to rest before eating improves its flavor.
