Mediterranean Roasted Potato Nachos Recipe

Ingredients

  • 1 pound Creamer Potatoes I used Terrific Trio, Little Potato Company brand
  • 1 tablespoon olive oil 1 teaspoon
  • ¾ teaspoon oregano dried
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • ¼ cup feta cheese crumbled
  • 3 tablespoons kalamata olive chopped
  • 1 red bell pepper skinned & chopped, roasted
  • ¾ cup cucumber English, chopped
  • ½ cup diced tomatoes
  • ¼ cup hummus I prefer Sabra
  • ¼ cup Greek yogurt plain, whole milk
  • 2 tablespoons parsley flat-leaf, minced
  • ½ teaspoon paprika

Instructions

  1. Preheat the oven to 400 degrees F. Lightly coat a large cast iron skillet with cooking spray. Alternatively, use a small baking sheet.
  2. Cut the larger Creamer potatoes into quarters and the smaller ones in half.
  3. Place the potatoes into a bowl. Toss with the olive oil, oregano, salt and pepper until coated. Transfer the potatoes to the skillet or baking sheet.
  4. Roast the potatoes until tender and starting to brown, stirring halfway through, about 30 minutes.
  5. Sprinkle the feta cheese and Kalamata olives over the potatoes. Cook for 2 minutes.
  6. Sprinkle the roasted pepper, cucumber and tomatoes over the potatoes. Dollop the hummus and yogurt on top.
  7. Sprinkle with parsley and paprika. Serve.
