For the dressing

  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • salt to taste
  • black pepper to taste
  • 1/4 teaspoon oregano dried
  • 1/4 teaspoon garlic powder

Instructions

For the dressing

  1. In a small bowl, whisk together the dressing ingredients.

For the salad

  1. Place the cucumbers, cherry tomatoes, red onion, green bell peppers, kalamata olives and parsley in a large bowl.
