Ingredients

  • 4 potato medium
  • 1 tablespoon sunflower oil
  • SEASONING salt, pepper, garlic powder - optional, for fries
  • feta cheese
  • 5-6 sun-dried tomatoes in oil
  • a generous handful of dill fresh
  • ½ red onion or ¼ if the onion is large, small
  • a few kalamata olives pitted and halved
  • 1 tablespoon olive oil

Instructions

  1. Cut the potatoes into quarters, drizzle with sunflower oil, season, and "fry" them in an air fryer—I absolutely love this gadget! If you don’t have an air fryer, bake them in a preheated oven at 200°C (390°F) for 20-30 minutes.
  2. Chop the sun-dried tomatoes, dill, and red onion.
  3. Combine all the ingredients in a bowl and mix gently.
  4. Serve the salad as is—enjoy!
