Mediterranean Tuna Salad

  • ½ cup bulgur wheat uncooked
  • 3 tbsp extra virgin olive oil
  • 1 clove garlic finely chopped
  • 7-8 oz (200g) cherry tomato
  • 1 can (6 oz or 160 g) tuna canned, drained, in water
  • 1 ½ cup parsley finely chopped, fresh
  • salt to taste
  • black pepper to taste
  • lemon for serving

Instructions

  1. Place the bulgur wheat in a heatproof bowl, add a pinch of salt, and 1 cup hot boiling water, plus a tsp of olive oil, give it a swirl and then cover with a plate. Let it sit in the water for about 20 minutes until it has absorbed most of the water. Once bulgur is ready, strain any leftover water. Empty in a bowl and add another tsp of olive oil and mix. Then add the chopped parsley, mix again, and set aside.
  2. In the meantime, heat 2 tbsp of olive oil in a medium pan, add the sliced chopped garlic along with the tomato and tuna, separating it with a wooden spatula and saute over medium heat. Continue cooking until the tomatoes burst and you have a somewhat thickened mixture, about 8 minutes.
  3. Add the tomato-tuna mixture to bulgur-parsley and mix well.
  4. Add a bit of salt and pepper and serve. You may add an additional 1-2 tsp of olive oil and squeeze a bit of lemon juice before serving.

Notes

  • Make ahead: You can prepare the bulgur 1 day ahead and store in the refrigerator.
  • To store: Up to 2 days covered in the refrigerator.
