Mediterranean Zucchini, Tomato and Feta Salad is a fresh, light and easy to make summer salad tossed in a lemon herb vinaigrette.

Ingredients
- 2 medium sized zucchini thinly sliced into half moons
- 2 medium sized yellow squash thinly sliced into half moons
- 1 cup cherry tomatoes halved
- 1/4 cup kalamata olives chopped
- 2 ounces feta cheese cubed or crumbled
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh mint
- 1 teaspoon lemon zest
- 3 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon granulated garlic
- Kosher salt and fresh ground black pepper to taste
Instructions
- In a large serving bowl whisk together the lemon zest, juice, olive oil, granulated garlic, salt and pepper.
- Add all of the ingredients to the bowl and gently toss to coat them in the lemon dressing. Taste for seasoning and serve.
Notes
- This salad is best eaten the day it's made.
