Melted Snowman Brownies are a fun and festive way to spruce up your brownies! The icing and marshmallow topping is perfect for Christmas.

Ingredients
For the brownies
- ½ cup (115g) melted butter
- ¾ cup (150g) sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup (50g0 unsweetened cocoa powder
- ½ cup (65g) all-purpose flour plain flour
For the royal icing
- 1 egg white
- 1 ½ cups (170g) confectioners' sugar or more as needed, sifted
- 1 teaspoon lemon juice or as needed
To decorate
- 16 marshmallows
- Black and orange decorating gel/writing icing
Instructions
- Preheat the oven to 350°F/175°C. Lightly grease an 8x8-inch square pan with spray oil or butter, or line with baking parchment paper.
- Whisk the butter, sugar and vanilla in a medium bowl together well.
- Whisk in the eggs, one at a time.
- Sift in the cocoa powder and flour, and gently stir to combine (don’t overmix, but ensure there are no streaks of flour).
- Pour the batter into the pan and spread out to the edges. Bake for 20 minutes or until the centre is just about set (don’t overbake or it will be cake-like and not chewy and soft).
- Cool completely then remove from the pan and cut into squares.
- Meanwhile, for the royal icing, beat the egg white lightly in a large bowl using an electric mixer until frothy. Slowly beat the powdered sugar into egg whites, a tablespoonful at a time, to make icing that will hold shape. Mix in the lemon juice. Add a little more juice to thin, or more sugar to thicken.
- Decorate the marshmallows with snowman faces.
- When the brownies are completely cooled, drizzle with the royal icing and top with a decorated marshmallow to look like a melted snowman.
Notes
- You can either use melted butter to make your own brownies from scratch or start with a boxed mix to save time. If you are using a boxed mix, be sure to follow the instructions for adding melted butter.
- The melted butter, sugar, and eggs should all be at room temperature before beginning to bake the brownies.
- When adding the cocoa powder to the melted butter and sugar, be sure to sift well to combine and avoid any lumps.
- Mix the brownie batter until just combined. Overworking the batter could cause the texture to be too stiff and tough.
- The melted snowmen should be assembled on top of the brownies while they completely cooled in order to ensure they stick.
- To pipe, the faces of the melted snowmen, use a small star tip and black and orange gel icing.
