  • 2 pounds potato peeled and cut into 1-inch thick rounds, Yukon gold variety
  • 4 tablespoons butter melted, unsalted
  • 1 teaspoon thyme finely chopped, fresh
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup chicken broth low-sodium

Instructions

  1. Preheat your oven to 475°F and position the rack in the upper third of the oven.
  2. In a large bowl, toss the potato rounds with melted butter, thyme, salt, and pepper until evenly coated.
  3. Arrange the potatoes in a single layer on a metal baking sheet, ensuring they do not overlap.
  4. Roast the potatoes in the preheated oven for 15 minutes, then flip them and continue roasting for another 15 minutes until they turn golden brown.
  5. Carefully pour the chicken broth over the potatoes and roast for an additional 20 minutes, until the broth has mostly evaporated and the potatoes are tender inside with a crispy exterior.
