Meme’s Cherry Coke Jello Salad
Description
Meme’s Cherry Coke Jello Salad combines pitted canned red tart cherries, cherry gelatin powder, crushed canned pineapple, and Coca-Cola to form a set gelatin dessert. The initial step involves boiling cherries with sugar and water to create a hot liquid into which the cherry gelatin powder is fully dissolved, ensuring the salad will set properly. After cooling briefly, Coca-Cola and pineapple are folded in before chilling for 6 to 8 hours.
The flavor mixes the tartness of cherries and pineapple with the sweet, caramel notes of Coke, producing a layered taste profile. The texture is firm from the jelly, contrasted by soft fruit pieces. Serving chilled enhances the refreshing sweetness and gelatinous texture.
This dish is a nostalgic treat that fits well as a sweet side dish at potlucks or family dinners. The inclusion of canned pineapple, rather than fresh, prevents enzymatic breakdown of the gelatin, ensuring a proper set. The salad can be prepared a day ahead and kept refrigerated for up to a week.
Adhering strictly to dissolving the gelatin powder in the boiling cherry mixture is critical for successful setting. Using canned pineapple is necessary as fresh pineapple enzymes prevent gelatin from solidifying. Proper chilling times help the salad firm up nicely.
Ingredients
- 14.5 ounce red tart cherries pitted in water, canned
- 1 cup granulated sugar
- ½ cup water
- 6 ounce cherry gelatin powder boxed
- 1 cup Coca-Cola
- 20 ounce pineapple crushed, canned
Instructions
- Add the cherries, sugar and water to a medium pot on the stove over medium high heat and bring to a boil.
- Add the jello powder to a large bowl or serving dish.
- Pour the boiling cherry mixture over the jello powder in the bowl or dish, stir to combine until all of the jello powder is dissolved.
- Allow to cool on the counter for 15-20 minutes.
- Add the coca-cola and pineapple and stir until everything is combined.
- Place in the refrigerator to set for 6-8 hours.
Notes
- Ensure the gelatin powder fully dissolves in the hot cherry mixture to prevent the salad from failing to set.
- Use canned crushed pineapple only, as fresh or frozen pineapple contain enzymes that stop gelatin from setting.
- Prepare ahead and refrigerate for 6–8 hours or overnight; the salad keeps well for up to 7 days in the fridge.
