Mexican Air Fryer Corn on the Cob + Grill Version

This recipe features corn on the cob cooked using two methods: air frying and grilling, both inspired by Mexican flavors. The corn is coated lightly with cooking spray and seasoned with salt, lemon zest, and fresh chopped cilantro to add brightness. The air fryer method cooks the corn evenly by turning it periodically, while the grilling approach adds a smoky char over a medium fire.

Description

Mexican Air Fryer Corn on the Cob + Grill Version highlights fresh corn seasoned simply but effectively with salt, lemon zest, and chopped cilantro. The air fryer method involves spraying the corn lightly with low-calorie cooking spray to help the seasonings adhere and facilitate cooking, then turning the corn a few times during the 10-minute process to ensure even heat exposure. The grill approach requires a light brushing or spraying of olive oil before cooking over medium heat, turning every few minutes to develop a charred exterior without burning. Both methods produce corn that is tender with a subtle smoky edge and a refreshing zest from the lemon and cilantro.

Serving this corn makes for a tasty side dish that adds a fresh, citrusy component to meals, especially those with grilled or Mexican-inspired fare. The versatility of the air fryer method is useful for quick indoor preparation, while the grilling method suits outdoor cooking scenarios like barbecues or campfires.

For best results, ensuring the corn is dry before applying cooking spray helps the seasoning stick better. Turning the corn regularly during cooking is key for uniform doneness. Using cooking spray keeps calories low, but olive oil is an acceptable substitute with increased calories. This recipe aligns with the WW Blue Plan SmartPoints as a low-point vegetable side.
