Mexican Beef Stew Recipe

Mexican Beef Stew is a slow-baked dish combining beef chunks with hearty vegetables like carrots and potatoes, along with diced tomatoes with green chiles and black beans. The blend of taco seasoning and beef broth creates a mildly spiced and savory sauce. Baking the stew covered for four hours at a low temperature results in tender meat and melding of flavors, making it a comforting main course.

Description

This Mexican Beef Stew recipe uses stew meat or chunked chuck roast baked with onions, carrots, potatoes, canned diced tomatoes with green chiles, rinsed black beans, and a package of taco seasoning. The vegetables maintain their shape while softening over the slow cooking period. The diced tomatoes with green chiles contribute subtle heat and tang, while the black beans add texture and additional protein.

The stew is combined in an oven-safe pot, covered, and baked at 275°F for four hours, allowing the beef to become tender and the flavors to develop and meld together. Tapioca is included as a thickener to yield a slightly thicker stew consistency. The cooking method is hands-off, suitable for planning ahead or busy days.

This stew can be served on its own as a hearty meal or accompanied by tortillas, rice, or crusty bread. The depth of flavor satisfies those looking for a gently spiced beef stew with Mexican-inspired ingredients that come together without complex preparation or long active cooking.
