Ingredients
- 16 ounce corn defrosted, frozen, fire roasted, in bag
- 1/2 cup green chiles or fire roasted green chiles, canned, diced
- 3 green onion sliced thin
- 1/2 cup cilantro chopped (optional
- 1 cup queso fresco crumbled
- 1 teaspoon chili powder
- 1 teaspoon cumin ground
- 1/2 teaspoon garlic powder
- 1 cup yogurt plain, Greek
- 3 tablespoons mayonnaise
- 1/2 lime juiced
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
Instructions
- In a large bowl combine the corn, green chiles, onions, cilantro, queso fresco and spices.
- In a separate bowl whisk together the Greek yogurt, mayonnaise and lime juice. Pour over the corn mixture and stir together until combined. Taste for seasoning and add salt and pepper as needed. Top with extra queso fresco and serve with tortilla chips.
Notes
- The dip can be made a day in advance if needed.
- If you can't find fire roasted corn (I've bought it at Whole Foods and Trader Joe's) regular frozen corn can be used.
