Mexican Cream Cheese Shrimp Dip

This Mexican Cream Cheese Shrimp Dip features a fresh combination of cooked shrimp, red onion, cucumber, tomatoes, and jalapeño tossed in a tangy tomato-lime dressing and served atop softened cream cheese. Creamy avocado and scallions add richness and freshness, paired well with crackers or tortilla chips.

Description

Mexican Cream Cheese Shrimp Dip mixes cooked small shrimp with diced red onion, cucumber, seeded plum tomatoes, cilantro, and jalapeño for a fresh vegetable base. This mixture is tossed in a bright dressing of lime juice, tomato juice, ketchup, hot sauce, and kosher salt that can marinate from one hour up to 24.

The marinated shrimp and vegetables are spooned over softened cream cheese to form layered dip with creamy texture contrasted by the crispness of fresh veggies. Avocado and scallions scattered on top contribute extra creaminess and a mild oniony bite. The dip is served chilled alongside saltine crackers or tortilla chips for scooping.

This dip works well as an appetizer or party dish. The overnight marinate allows the flavors to meld while the sharp cream cheese base balances the tangy, slightly spicy seafood mixture. Draining excess liquid before serving prevents sogginess on the crackers.
