Mexican Fries Recipe

This Mexican Fries recipe layers baked fries with roasted corn, sharp cheddar, and a chipotle-infused crema, topped off with black beans, fresh veggies, guacamole, and cilantro. The savory, smoky flavors meld with the melted cheese, creating a satisfying and colorful dish. It works well as a snack or side with bold toppings.

Description

Mexican Fries Recipe uses frozen fries baked at 425°F until crispy, alongside roasted corn to add a slightly charred sweetness. A chipotle crema made from Greek yogurt, mayonnaise, and pureed chipotle peppers adds smoky heat and creaminess. After initial baking, the fries are layered with shredded white cheddar cheese, roasted corn, and optionally black beans, red onion, cherry tomatoes, and jalapeños, then baked again until the cheese melts.

The final dish is garnished with fresh guacamole, cilantro, and lime wedges, offering bright, creamy, and herbaceous contrasts to the rich, spicy fries. This layering approach combines textures from crispy fries to melted cheese and crunchy vegetables, with a kick from the chipotle crema.

This recipe suits casual meals, appetizers, or game day snacks. The toppings can be adjusted to taste, and the chipotle heat calibrated by varying the adobo amount. The layering method ensures the fries remain crispy beneath the melted cheese and toppings.

Using either sweet potato or regular fries is viable depending on preference, and roasting the corn on a baking sheet alongside the fries adds complementary flavor. The crema can be served on the side if desired for added dipping.
