Mexican Pinwheels
Description
The filling combines cream cheese, sour cream, salsa, taco seasoning, and garlic powder, mixed until smooth to provide a tangy and seasoned base. Chopped canned green chilies add mild heat and texture, along with finely shredded Mexican cheese for richness. This mixture is evenly spread onto large flour tortillas, which are then rolled tightly like a jelly roll to enclose the filling. After chilling in the refrigerator to set the filling and make slicing easier, the rolls are cut into 1-inch thick pinwheels that display the spiral layers of filling and tortilla. Served chilled or at room temperature with extra salsa on the side, these bite-sized pieces offer a creamy and flavorful snack with a combination of textures from the soft tortilla and cheesy filling.
They can be made ahead, sliced up to 24 hours early and stored covered in the refrigerator. Leftovers keep well refrigerated for around 3 days or can be frozen for up to 3 months.
Ingredients
- 1 (8-ounce) package cream cheese softened
- ½ cup sour cream
- ¼ cup salsa
- 2 tablespoons taco seasoning
- dash garlic powder
- 1 (4-ounces) can green chili chopped
- 1 cup Mexican cheese finely shredded
- 8 (10-inch) flour tortillas
- salsa on the side
Instructions
- Add cream cheese, sour cream, salsa, taco seasoning, and garlic powder to a small bowl. Mix together until smooth. Add the chilies and cheese and stir.
- Scoop ½-¾ cup of the mixture onto each 10-inch tortilla. Spread the mixture to cover the tortilla.
- Roll each tortilla like you would a jelly roll. Line them up, seam side down, in a baking dish. Cover the dish and place it in the fridge to chill for 2 hours overnight.
- After they have chilled slice each tortilla roll into 1-inch pieces. Place them side by side on a serving tray so that you can see the rolled layers. Serve with salsa.
Notes
- Prepare the pinwheels at least 2 hours ahead and chill to firm the filling before slicing.
- Sliced pinwheels can be made up to 24 hours in advance and kept covered in the refrigerator.
- Store leftovers in an airtight container with plastic wrap on top to prevent drying; refrigerate for up to 3 days.
- For longer storage, freeze the pinwheels for up to 3 months and thaw before serving.
