FOR THE MEXICAN PIZZAS

  • 2 cups refried beans warmed (16 ounce can)
  • 1 teaspoon vegetable oil
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 2 cups enchilada sauce (or use taco sauce)
  • 8 ounces cheddar cheese shredded
  • tomato diced tomato, sliced black olives, toppings
  • black olives
  • green onion
  • hot sauce
  • salt to taste

Instructions

  1. To make the crispy tortillas, heat the vegetable oil in a pan to medium heat. Add the tortillas, 1-2 at a time, and lightly fry each side 2-3 minutes, or until the corn tortillas turn golden brown and begin to crisp up.
  2. Set onto paper towels to drain excess oil. Season lightly with salt.
