Ingredients
- 2 cloves garlic minced
- 2 jalapeños seeded and finely chopped
- 1 cup quinoa rinsed well and drained, uncooked
- 1 ¼ cups vegetable broth or chicken broth
- 1 can 1 ½ cups black beans, rinsed and drained
- 1 diced tomatoes with juice, canned 14.5 oz
- ¾ cup corn
- ½ teaspoon kosher salt
- ¼ cup cilantro optional, chopped, fresh
- 1 lime juiced, quarter
- salsa sour cream/Greek yogurt, shredded cheese, tortilla chips, and avocado, to serve
