Ingredients

  • 2 cloves garlic minced
  • 2 jalapeños seeded and finely chopped
  • 1 cup quinoa rinsed well and drained, uncooked
  • 1 ¼ cups vegetable broth or chicken broth
  • 1 can 1 ½ cups black beans, rinsed and drained
  • 1 diced tomatoes with juice, canned 14.5 oz
  • ¾ cup corn
  • ½ teaspoon kosher salt
  • ¼ cup cilantro optional, chopped, fresh
  • 1 lime juiced, quarter
  • salsa sour cream/Greek yogurt, shredded cheese, tortilla chips, and avocado, to serve
