Mexican Shrimp Bites
Description
This dish features shrimp seasoned with chili powder that are cooked just until pink and opaque in a hot pan with olive oil to preserve a tender texture and slight caramelization. The individual bite combines a crunchy potato chip base with creamy guacamole and a single shrimp on top, providing a variety of textures in each mouthful.
The guacamole can be homemade or store-bought, lending a smooth, rich complement to the spicy shrimp and salty chip. A sprinkle of cilantro adds freshness and an herbaceous lift. The recipe scales to 18 bites, making it suitable for sharing at casual gatherings or as finger food before a main meal.
