Mexican Shrimp Cocktail Recipe
Description
The Mexican Shrimp Cocktail Recipe brings together medium cooked shrimp with finely diced red onion, seeded jalapeño, cucumber, and Roma tomatoes for a mix of textures. The cocktail is dressed in a savory and spicy broth comprising clamato juice, clam juice, ketchup, lime juice, hot sauce, Worcestershire sauce, garlic, and seasonings. Fresh cilantro provides herbal notes, while diced avocado contributes creaminess when served.
The ingredients are combined and chilled for about an hour to allow flavors to meld before serving. This preparation highlights fresh, vibrant flavors with a balance of tang, heat, and seafood taste. It's commonly accompanied by saltine crackers or tortilla chips to scoop the cocktail, making it ideal as a snack or appetizer.
Adjust seasoning with salt, lime, and heat levels as desired for personal preference. Best consumed within 8 hours of preparation, it is recommended to keep the cocktail refrigerated and covered if made ahead.
Ingredients
- 1 ½ pounds Shrimp cooked (some with tails on, optional, medium; U20-25 count
- 1 cup red onion finely diced (white or yellow onion may be substituted)
- 1 jalapeño seeded and diced (use serrano chile for more heat)
- 1 tablespoon black pepper or to taste, freshly ground
- 2 teaspoons kosher salt plus more to taste if deseired
- 1 teaspoon garlic finely minced
- ½ English cucumber diced (or another cucumber that is seeded)
- 2 Roma tomato small diced, medium
- ¾ cup cilantro finely minced or to taste, fresh
- 32 ounce clamato juice spicy or regular, bottle
- ¾ cup ketchup
- ¾ cup clam juice
- ¼ cup hot sauce such as Valentina or Tapatio, Mexican style
- 2 to 3 tablespoons lime juice freshly squeezed preferred
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- 1 avocado small cubes, or 2 small avocados
- saltine cracker for serving, or tortilla chips
- lime for serving, wedges
Instructions
- To a large bowl, add all ingredients except the avocado, stir to combine.
- Taste, check for seasoning and flavor balance, and make adjustments as necessary. Flavor Tips - If it tastes at all flat or bland I first recommend adding salt, then lime juice, then something spicy like more jalapeno/serrano or hot sauce. Often another few pinches of cilantro can help out too in Mexican recipes to balance the flavor.
- Cover and refrigerate for an hour before serving with cracker or chips as desired.
Notes
- Prepare the cocktail up to four hours in advance and keep it refrigerated covered until serving.
- Consume within eight hours of preparation for optimal freshness and flavor.
