Mexican Spring Rolls (Egg Rolls)

Mexican Spring Rolls are baked rolls filled with a savory mix of pulled pork, cheese, black beans, corn, and bell peppers, seasoned with paprika and cumin. Wrapped in spring roll or egg roll wrappers and baked until golden, the rolls have a crispy exterior and a flavorful, moist filling. Served with enchilada sauce, they integrate Mexican-inspired ingredients into a crunchy appetizer or snack.

Description

This recipe takes leftover pulled pork carnitas combined with cheese, vegetables, and spices to create a robust filling. The mixture is shaped inside wrappers, sealed, lightly sprayed with olive oil, and baked until crisp and golden. The use of canned beans and corn adds texture and complementing flavors. The spices—paprika, cumin, and onion powder—offer warmth without overwhelming the filling.

Finished rolls are ideal as finger food or appetizer served with a dipping sauce such as enchilada sauce, which can be store-bought or homemade for enhanced flavor. Baking instead of frying reduces added fat while still achieving a crispy shell.

Egg roll wrappers are smaller than spring roll wrappers, thus requiring adjustment in filling quantity. This recipe accommodates substitutions in meat, allowing use of chicken, beef, or turkey if desired.

  • 3/4 cup black beans (canned)
  • 1/2 cup bell pepper capsicum), diced, red

  4. Roll up the wrapper to halfway, then fold in the left and right sides, then roll to the end, using a little water to seal.
  5. Spray the spring rolls lightly, then turn each spring roll and lightly spray the other side.
  6. Bake for 30 minutes, turning once, until golden.
  7. Serve with Enchilada Sauce as the dipping sauce.

Notes

  • Use leftover pulled pork carnitas or substitute with other shredded meats like chicken, beef, or turkey.
  • Spring roll wrappers are larger than egg roll wrappers; adjust filling amounts accordingly.
  • Spraying wrappers with olive oil helps achieve a golden, crispy texture when baking.
  • Enchilada sauce for dipping can be store-bought or homemade for better flavor.
