  • 4 corn on the cob
  • 1 tablespoon olive oil
  • salt to taste
  • black pepper to taste
  • cup mayonnaise
  • cup sour cream or crema
  • 1 tablespoon cilantro plus extra for serving, chopped, fresh
  • ½ teaspoon ancho chile powder
  • ½ cup cotija cheese or feta cheese
  • lime wedges

Instructions

  1. Preheat grill to medium heat.
  2. On a plate, mix mayonnaise, sour cream, chile powder, and cilantro.
  3. Brush corn with olive oil and season with salt & pepper to taste.
  4. Grill 8-12 minutes or until cooked and lightly browned.
  5. Roll or brush corn in the mayonnaise mixture and sprinkle with cheese.
  6. Serve with lime.

Notes

  • Store leftover elote covered in the refrigerator for up to 3 to 4 days.
