Mexican Tortilla Pinwheels

Mexican Tortilla Pinwheels combine cream cheese, cheddar, black beans, and colorful bell peppers rolled inside spinach tortillas for a visually appealing, flavorful snack or appetizer. The cream cheese base is spiced with chili powder, lending a subtle heat that complements the beans and peppers. The rolled and sliced tortillas create bite-sized pinwheels that can be served immediately or chilled.

Description

This recipe starts by mixing softened cream cheese with shredded cheddar and chili powder, allowing adjustment of spice level. The cream cheese spread coats large spinach tortillas completely, which are then sprinkled with drained black beans and finely chopped red, orange, or yellow bell peppers. Tightly rolling the tortillas and slicing them into crosswise pinwheels showcases the layered colors and fillings.

The pinwheels deliver creamy, slightly spicy cheese balanced by fresh crispness from the bell peppers and the black beans’ texture. Using spinach tortillas adds a mild earthy note and color contrast. Serving these chilled or fresh makes them a practical choice for gatherings or light meals.

This dish is simple to assemble with no cooking required, making it a convenient option for quick preparation or make-ahead serving. Garnishing with chopped cilantro and additional beans or peppers enhances the presentation and flavor.
