Meyer Lemon Roasted Chicken
Description
The Meyer Lemon Roasted Chicken recipe combines bone-in, skin-on chicken thighs with a mixture of lemon zest, salt, black pepper, dried basil, thyme, rosemary, garlic powder, and red pepper flakes for well-rounded seasoning. The chicken is placed on a lightly oiled baking sheet alongside peeled garlic cloves, a whole garlic head sliced on top for roasting, and thin slices of Meyer lemon. Olive oil is drizzled over everything before roasting at 425°F for 35 to 40 minutes until the chicken reaches an internal temperature of 165°F. After roasting, fresh oregano is sprinkled on for a fresh herbal note.
The roasting process allows the citrus and garlic to infuse the chicken while the high temperature crisps the skin and seals in juices. The combination of delicate dried herbs and fresh oregano brings complexity without overwhelming the chicken’s flavor.

Ingredients
- 1 1/2 pounds chicken thighs
- 3 tablespoons olive oil
- 2 teaspoons lemon zest
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon basil dried
- 1/2 teaspoon thyme dried
- 1/4 teaspoon rosemary dried
- 1/4 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 4 garlic peeled, cloves
- 2 lemon thinly sliced, Meyer variety
- 1 garlic head
- 3 tablespoons oregano fresh
Instructions
- Preheat the oven to 425 degrees F. Brush a baking sheet with a drop of olive oil or mist it with olive oil. Pat the chicken dry with paper towels.
- In a bowl, stir together the lemon zest, salt, pepper, basil, thyme, rosemary, garlic powder and pepper flakes.
- Place the chicken on the baking sheet and drizzle it with 1 1/2 tablespoons of the olive oil. Sprinkle the seasoning mixture over top on each chicken thigh. Place the garlic cloves and lemon slices around the chicken. Slice off the top of the garlic head and rub off any excess paper on the outsides, then place the head of garlic, cloves-side up on the sheet too. Take the remaining olive oil and drizzle it over top of the seasoned chicken, head of garlic and lemons.
- Roast for 35 to 40 minutes, or until the insides of the chicken reaches 165 degrees F. Remove the chicken and sprinkle on the fresh oregano. Serve!
