Description
Making Microwave Caramel Corn involves melting brown sugar, corn syrup, butter, and salt in the microwave, stirring frequently to achieve a smooth caramel base. Vanilla and baking soda are then added; the baking soda reacts with the caramel mixture to form tiny bubbles that soften the final coating.
The popped popcorn is placed inside a large paper bag, and the caramel sauce is poured over it. Shaking the bag ensures even coverage. The bag is microwaved multiple times, with shaking intervals to help the caramel set and distribute without clumping. After cooking, the coated popcorn is spread on wax paper to cool and harden.
This technique yields popcorn with a lightly chewy, crispy caramel shell. The recipe’s flexibility allows substitution of a microwave-proof bowl for the bag if preferred. Re-crisping soft caramel corn later is possible by baking it in a low oven while stirring.
Ingredients
- 16 c. Popcorn about 1/2 c. - 2/3 c. kernels
- 1 c. brown sugar
- 1/4 c. corn syrup
- 1/2 c butter
- 1/2 tsp salt
- 1 tsp vanilla
- 1/2 tsp baking soda
Instructions
- Melt brown sugar, corn syrup, butter, and salt in microwave for 3 minutes, stirring in one minute intervals.
- Add vanilla and baking soda to brown sugar mixture. Mix well.
- Put popped popcorn into a brown grocery bag. Pour brown sugar mixture over the popcorn. Shake bag.
- Put grocery bag in microwave. Microwave for 3 minutes. After each minute take bag out and shake. After three minutes microwave for 1 minute and 30 seconds. Shaking after each 30 second interval. Pour onto wax paper and let cool.
Notes
- A large microwave-safe bowl can replace the paper bag for mixing and heating the popcorn and caramel.
- Baking soda in the caramel causes a foaming reaction that produces small air bubbles, yielding a softer, less brittle coating once cooled.
- If the caramel corn loses crispness over time, reheating it in a 250°F oven while stirring every 15 minutes can restore crunch.
