  • salt to taste
  • black pepper to taste
  • 1 teaspoon butter
  • 2 tablespoons cheddar cheese shredded sharp
  • 2 tablespoons mix-ins below

Instructions

  1. Whisk eggs with salt & pepper.
  2. Spray a coffee mug with cooking spray (or rub with oil).
  3. Place butter in the bottom of the mug.
  4. Add eggs and microwave 45 seconds.
  5. Stir in half of the cheese and all of the mix ins. Microwave an additional 35-45 seconds or until the eggs are cooked through.
  6. Top with remaining cheese and rest 30 seconds.

  • Select mix-ins like cooked vegetables or meats to customize the omelette while preventing them from sinking by adding after partial cooking.
