Microwaved Sweet Potatoes

Microwaving a medium-sized sweet potato offers a quick way to enjoy a tender, naturally sweet side dish. This method softens the potato evenly by piercing the skin multiple times and turning it halfway through cooking, resulting in moist flesh ideal for butter and seasoning toppings. It's practical for cooks seeking a fast alternative to oven baking without sacrificing the sweet potato's creamy texture and hearty flavor. Simple seasonings of flaky sea salt and optional black pepper enhance its natural sweetness and make it ready for a wholesome meal addition.

Description

Microwaved Sweet Potatoes is a straightforward recipe centered around cooking a single medium sweet potato by piercing it several times and microwaving it wrapped in a paper towel for about five minutes. Turning the potato halfway through ensures even cooking, while checking doneness by piercing the skin helps achieve a tender interior. Once cooked and slightly cooled, the potato is split open, topped with unsalted butter, and sprinkled with flaky sea salt and optional black pepper. This technique softens the potato flesh while loosening the skin slightly for easy handling.

The dish highlights the natural sweetness and moist texture of the potato when cooked quickly in the microwave. The contrasting flaky salt and butter add richness and balance. This makes for a convenient side dish or snack without the longer wait of traditional baking.

For best results, monitor cooking times as they vary by potato size and microwave strength. Cooking more than one at a time is possible but recommend limiting to one or two due to heating inconsistencies, with close attention to doneness. The method avoids dry edges by turning the potato mid-cook, ensuring softness throughout. This simple preparation preserves the inherent qualities of the sweet potato and can be a practical addition to meals when time is limited.

Ingredients

Servings
  • 1 sweet potato medium-sized
  • 1 butter unsalted, pat
  • sea salt flaky
  • black pepper optional, coarsely ground

Instructions

  1. Rinse and scrub the potato to make sure any dirt or debris that might have been stuck to the skin has been removed. Pat it dry with a paper towel. Using a fork, carefully pierce the potato all over 5-8 times.
  2. Wrap the potato in a paper towel and place it on a microwave-safe plate and place it in your microwave. Set the timer for 5 minutes. About 2 ½-3 minutes into the cooking time, open the door to the microwave and turn the potato over with an oven mitt or a doubled-up kitchen towel so it cooks evenly throughout.
  3. When the five minutes is up, take your potato out. The skin will have loosened a bit. Using a knife, pierce the skin. If it goes through to the center of the potato easily, you are ready to go. If not, keep cooking the potato in 30-second increments, checking between each round, until it is done.
  4. Allow it to cool for a minute or two and then cut it down the middle and spread it just a bit. Top with a pat of unsalted butter and sprinkle with flakey sea salt and a little bit of ground black pepper if you want a touch of heat.
