Minestrone Soup

Minestrone Soup brings together a medley of vegetables like carrots, celery, and cabbage with kidney and garbanzo beans simmered in a rich chicken broth and tomato base. The addition of short cut pasta adds a tender bite, making it a hearty and textured soup. This combination provides a comforting balance of soft vegetables and tender pasta, ideal for colder days or whenever a filling vegetable soup is desired.

Description

The Minestrone Soup recipe uses a base of sautéed onion, carrot, and celery cooked in butter and olive oil before adding chicken broth, canned beans, tomato sauce, diced tomatoes, herbs, and shredded cabbage. Simmering the mixture allows the flavors to meld and the vegetables to soften without losing their texture. Adding the pasta shortly before serving ensures it cooks just right without becoming mushy, contributing a pleasant chewiness to the soup. Finished with seasoning to taste, the soup offers a balance between the savory broth, the earthiness of beans, and the fresh bite of cabbage.

The soup can be enjoyed on its own or complemented with Parmesan cheese and crusty bread to add richness and a contrasting crunch. This makes it suitable as a starter or a complete meal for lunch or dinner. The combination of ingredients offers both protein and vegetables in a single dish.
