Minestrone Soup

A delicious vegetable soup with a tomato broth, vegetables, beans and pasta. Make this copycat Olive Garden Minestrone soup for an easy dinner.

Ingredients

  • 4 Tablespoons extra-virgin olive oil divided
  • 1 yellow onion chopped, medium
  • 2 carrot peeled and chopped, medium
  • 2 celery chopped, medium ribs
  • 4 cloves garlic minced
  • 1 zucchini quartered and sliced
  • 14 ounces diced tomatoes canned, petite
  • 4 cups vegetable broth
  • 4 cups water
  • ¼ cup tomato paste
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt fine sea salt
  • ½ teaspoon black pepper ground
  • 15 ounces White beans rinsed and drained, small, canned
  • 15 ounces Kidney Beans rinsed and drained, canned
  • ½ cup green beans frozen, cut
  • 1 cup small shell pasta
  • 2 cups baby spinach
  • Parmesan Cheese for garnishing (optional, freshly grated

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium high heat. Add the onion, celery, carrots and zucchini to the pot.
  2. Cook until the vegetables are tender, 7-8 minutes. Add the garlic and cook for 30 seconds or until fragrant.
  3. Add the zucchini, tomatoes, vegetable broth, water, tomato paste, Italian seasoning, salt and pepper to the pot. Bring to a simmer.
  4. Add the white beans, kidney beans, green beans and pasta to the pot. Simmer for 10-15 minutes or until pasta and vegetables are tender.
  5. Stir in the spinach leaves and cook for 2-3 minutes or until wilted.
  6. Sprinkle the Parmesan cheese over the soup and serve.

Notes

  • FRIDGE: Transfer leftovers to an airtight container and refrigerate for 3-4 days.
  • FREEZER: Leftovers stored in an airtight container can be frozen for up to 3 months. Allow to thaw before reheating.
  • Let your soup completely cool before transferring it to the fridge or freezer! To reheat, place on the stovetop or in the microwave until warmed through.
