Mini Chocolate Cheesecake

If you want the best ever Mini Chocolate Cheesecake, you have found it. It is incredibly easy to make and tastes amazing. This cheesecake is so creamy, it is sure to be a crowd pleaser.

Ingredients

Chocolate Cookie Layer

  • 1 1/2 C flour
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 10 tbsp butter softened, unsalted
  • 1 C sugar
  • 2 large egg yolk
  • 2 tbsp milk whole
  • 2 tsp vanilla extract pure

Cheesecake Filling

  • 2 - 8 oz cream cheese softened
  • 1 C sugar
  • ½ C sour cream
  • ¾ tsp vanilla extract pure
  • tsp kosher salt
  • 2 large egg
  • 3 tbsp cocoa powder Hershey's dark
  • 1 box Whopper chocolate candies

Chocolate Ganache

  • 1 C semi sweet chocolate chips
  • ½ C heavy whipping cream

Instructions

Chocolate Cookie Layer Directions

  1. Preheat oven to 350 degrees and line a cupcake pan with cupcake liners
  2. Using a large bowl, whisk together the flour, cocoa powder, baking
  3. soda and salt together
  4. Using a standing mixer, beat together the butter and sugar until light
  5. and fluffy
  6. Beat in the egg yolk, milk, and vanilla extract
  7. Gradually mix in the dry ingredients until combined
  8. Spoon about 1 tbsp of the batter into each cupcake liner
  9. Bake in the oven for about 5 - 7 minutes
  10. Set aside to cool

Cheesecake Filling Directions

  1. Bring oven temp down to 325
  2. Using a standing mixer, beat together the cream cheese and sugar until
  3. smooth and creamy
  4. Beat in the sour cream, vanilla, cocoa powder and salt until combined
  5. Beat in the eggs, 1 at a time until combined
  6. Scoop about ¼ C of the cheesecake batter into the cupcake liners
  7. Bake in the oven for 17-21 minutes or until the edges start to turn a
  8. light golden brown color and the center is set
  9. Allow to cool completely

Chocolate Ganache Directions

  1. Pour chocolate chips into a heat safe bowl
  2. Using a small pot, bring the heavy whipping cream to a slow simmer
  3. Pour heavy whipping cream over the chocolate chips and whisk until smooth
  4. Scoop 1 ½ tbsp of ganache onto the top of the cold cheesecakes
  5. Place a Whopper candy in the center of the cheesecake
  6. Enjoy!
