Description

  • 1 lb ground turkey lean
  • 2 tbsp taco seasoning click link for easy homemade recipe
  • 15 oz corn drained & rinsed, canned
  • 15 oz black beans drained & rinsed, canned
  • 10 oz diced tomatoes with green chilies do not drain, canned
  • 2 lbs mini pepper de-stemmed & sliced in half
  • 3 cups Mexican blend cheese
  • ¼ cup jalapeno pepper nacho sliced

Optional Toppings:

  • diced tomatoes
  • sour cream
  • avocado or guacamole
  • salsa
  • cilantro
  • hot sauce

Instructions

  1. Add the ground turkey to a large skillet over medium heat, cook 6-7 minutes. 
  2. Add the taco seasoning, corn, black beans and diced tomatoes with green chilies, continue cooking for 4-5 minutes. Remove from the heat and set aside.
  3. Preheat the oven to 400°F.
  4. Arrange the mini peppers on a large baking sheet, cover with the turkey mixture, then the cheese and jalapenos. 
  5. Place in the oven for 10 minutes. 
  6. Remove and top with the optional toppings of your choice.

Notes

  • Optional toppings include diced tomatoes, sour cream, avocado or guacamole, salsa, cilantro, and hot sauce to customize flavor and heat.
