Ingredients
- 1 lb ground turkey lean

- 15 oz corn drained & rinsed, canned
- 15 oz black beans drained & rinsed, canned
- 10 oz diced tomatoes with green chilies do not drain, canned
- 2 lbs mini pepper de-stemmed & sliced in half
- 3 cups Mexican blend cheese
- ¼ cup jalapeno pepper nacho sliced
Optional Toppings:
- diced tomatoes
- sour cream
- avocado or guacamole
- salsa
- cilantro
- hot sauce
Instructions
- Add the ground turkey to a large skillet over medium heat, cook 6-7 minutes.
- Add the taco seasoning, corn, black beans and diced tomatoes with green chilies, continue cooking for 4-5 minutes. Remove from the heat and set aside.
- Preheat the oven to 400°F.
- Arrange the mini peppers on a large baking sheet, cover with the turkey mixture, then the cheese and jalapenos.
- Place in the oven for 10 minutes.
- Remove and top with the optional toppings of your choice.
