Mini Quiche Appetizers - Turkey & Feta
Description
This recipe combines chopped turkey breast and feta cheese as the filling for mini quiches made in muffin pans. Beaten eggs are poured into each section about three-quarters full, then topped with a spoonful of the turkey and feta mixture pressed lightly into the eggs. Baking at 400°F for about 20 minutes results in small golden quiches with a firm, set center that doesn’t jiggle when finished.
The turkey adds a savory protein base, while the feta contributes a tangy, crumbly texture. The eggs bind the ingredients into a custard-like interior. Fresh parsley garnish adds color and a hint of freshness. Serving with cranberry sauce or chutney provides a sweet contrast to the savory flavors.
These mini quiches work well as appetizers or finger foods at gatherings. They can be made ahead and frozen or refrigerated before baking to fit preparation schedules.
For ease of filling, whisking eggs in a measuring cup allows precise pouring. Oven-roasted turkey from store brands can be used for convenience.
Ingredients
- 1 cup carved turkey breast diced, oven roasted, Lilydale® brand
- ½ cup feta cheese crumbled
- 7 egg large
- ¼ cup cranberry sauce for serving, or chutney
- parsley for garnish, fresh, chopped
Instructions
- Preheat oven to 400°
- Lightly oil two 12 section mini muffin pans, or use non stick
- In a bowl, mix together the turkey and feta.
- In another bowl, whisk eggs until combined
- Fill each muffin pan section with beaten egg about ¾ full
- To each egg-filled section, add about a tablespoon of the turkey & feta mixture, pressing into the egg with the back of the spoon.
- Bake in center of oven 20 minutes or until golden and center doesn't jiggle if you shake the pan.
- Allow to cool and garnish with parsley. Serve with cranberry sauce for topping.
Notes
- Whisk eggs in a large measuring cup for easy and accurate pouring into muffin cups.
- Mini quiches can be made ahead and frozen in an airtight container for up to 3 months.
- Alternatively, prepare them up to two days in advance and store in the refrigerator before baking and serving.
