Mint Chia Pudding Recipe With Brownie Bottom
Description
The Mint Chia Pudding with Brownie Bottom combines two distinctive layers to create a unique dessert. The bottom consists of mashed avocado, cocoa powder, agave syrup, almond milk, and vanilla blended into a creamy chocolate base. This layer provides a rich, dense texture with subtle sweetness and healthy fat from the avocado.
On top sits the chia pudding, made by whisking chia seeds into almond milk sweetened with agave syrup and flavored with peppermint extract. As the mixture chills overnight, the chia seeds swell, creating a gelatinous pudding that contrasts nicely with the creamy brownie base. The peppermint adds a fresh note that balances the chocolate.
This dessert is best served chilled and swirled before eating to combine the flavors and textures. Its make-ahead nature makes it convenient for breakfast or a light treat. The ingredient choices prioritize a dairy-free approach and provide a mix of textures from creamy to gel-like.
