Mint Chocolate Energy Balls

Mint Chocolate Energy Balls combine cashew nuts, medjool dates, cacao powder, ground flaxseed, and peppermint extract for a sweet, chewy, and nutty snack. The dates bind the mixture while the peppermint adds a fresh, cool note. Rolled into bite-sized balls, they are convenient for energy boosts or dessert-like treats.

Description

This recipe blends raw cashews with pitted Medjool dates and ground flaxseed to create a sticky base. Cacao powder adds deep chocolate flavor, while peppermint extract infuses the mixture with a refreshing mint aroma. Processing the ingredients until they stick together produces a dense dough that can be shaped into small balls. The mixture’s moisture from the dates ensures cohesion, but if the dough is too dry, a small amount of water can be added.

The resulting energy balls offer a chewy texture with nuttiness from cashews and sweetness from the dates balanced by rich cacao and bright mint. They are suited for quick snacks or a naturally sweet treat without added refined sugars. Rolling into uniform balls ensures consistent portions and ease of eating.

For best results, use fresh, moist dates or soak dried dates briefly to soften. Peppermint extract should be added according to taste, as it greatly influences the overall flavor. Adjust water addition sparingly to achieve a cohesive dough without stickiness.

Ingredients

Servings
  • 1 cup cashew nuts raw
  • 10 date Medjool, pitted
  • ¼ cup cacao powder
  • 2 tablespoons Flaxseed ground
  • 1 teaspoon peppermint extract
  • sea salt pinch

Instructions

  1. Add all of the ingredients to a food processor, and process on high until the mixture starts to stick together.
  2. Using a medium cookie scoop, scoop a ball and roll it in between your hands. Then place it on a plate. Continue this process until you've used up all the dough.

Notes

  • Use fresh, moist dates; if dried, soak in warm water for 10 minutes before blending.
  • If the mixture isn’t sticking, add 1-2 teaspoons of water gradually and blend more.
  • Choose peppermint extract with a natural flavor for an authentic mint taste.
