Description

This mint pesto recipe combines lightly packed fresh mint and parsley with roasted, salted pistachios, grated Parmesan cheese, lemon juice, garlic, and cold water. Blending these ingredients creates a vibrant green sauce with fresh herbal notes and creamy texture. The pistachios contribute subtle nutty undertones and texture, while lemon juice brightens the flavor profile, complementing the mint and parsley. Garlic adds a mild spicy depth, and Parmesan delivers a savory richness.

The pesto is blended to mostly smooth texture, using additional water as needed to thin it to a desired consistency.   • 2 cups mint lightly packed
  • 1 cup parsley lightly packed
  • ¼ cup pistachio see notes, salted, roasted
  • 2 tablespoons lemon juice
  • 2 tablespoons Parmesan Cheese grated
  • 1 clove garlic smashed
  • 4-6 tablespoons water cold

Instructions

  1. Add the mint, parsley, pistachios, lemon juice, parmesan cheese, garlic, and 4 tablespoons of cold water to your blender. 
  2. Blend on medium speed (see notes) until the pesto is mostly smooth. Add additional water, 1 tablespoon at a time, if needed to thin the pesto and help it blend. 

Notes

  • Using pre-shelled pistachios can slightly darken the pesto color compared to in-shell roasted ones.
  • Blend on medium speed with a high-powered blender; with a regular blender use high speed to achieve smoothness.
