Miso Black Cod

Miso Black Cod features delicate fillets marinated overnight in a mixture of white miso, sake, mirin, and sugar, infusing the fish with a balanced salty and sweet flavor. The brief grilling before finishing in the oven gives the cod a lightly charred surface while keeping the interior tender and moist. This method highlights the richness of the black cod with a subtle umami glaze, ideal for a refined seafood dish.

Description

Miso Black Cod uses fillets soaked in a marinade of white miso paste, sake, mirin, and sugar for up to 24 hours. The marinade imparts sweet and savory notes that penetrate the fish. After removing excess marinade without rinsing, the cod is gently grilled to develop a lightly browned exterior. It is then baked until cooked through, which seals in moisture and maintains a flaky texture.

The finished dish offers a delicate balance between the creamy softness of black cod and the flavorful miso glaze. Serving it hot enhances the aroma and taste, with a touch of the marinade sauce added to the plate for additional flavor.

Black cod can be substituted with similar flaky fish like sea bass or salmon if desired. White miso is specified to preserve the intended flavor profile. Adjusting marinade quantities or gently reducing the sauce by heating can help manage consistency for plating.

Ingredients

Servings
  • 2-3 black cod about 1 lb. (0.4 kg, fillets

For the marinate:

  • 1/4 cup sake
  • 1/4 cup mirin
  • 4 tablespoons White miso paste
  • 3 tablespoons sugar

Instructions

  1. Mix the Marinade ingredients thoroughly in a plastic container with a lid and set aside, reserving some for plating purposes.
  2. Pat the fish fillets dry with paper towels and place them in the plastic container with the marinade. Cover the container with a lid and let the fish steep in the refrigerator overnight or for up to 24 hours.
  3. Preheat the oven to 400°F (207°C) and preheat an indoor grill at the same time.
  4. Lightly wipe off any excess miso marinade clinging to the fish fillets with your fingers, but do not rinse it off. Place the fish on the grill and lightly grill both sides until the surface turns brown.
  5. Transfer the fish fillets to the oven and bake for 10 to 15 minutes.
  6. Add a few extra drops of the marinade to the plate and serve hot.

Notes

  • Use white miso paste to achieve the intended mild, sweet miso flavor.
  • Substitute black cod with sea bass or salmon fillets as alternatives.
  • For a thicker plating sauce, gently heat the marinade to reduce or use slightly less sake and mirin in the marinade.
