Description
Miso Soup is crafted by simmering mushrooms and firm tofu cubes in a lightly flavored stock made from water, dashi, or vegetable broth. Once the mushrooms are tender, sliced scallions are added just before serving for freshness and mild onion flavor. The key step is whisking the miso paste into a small amount of hot broth to dissolve it before mixing it back, preserving its flavor and preventing clumps. This soup presents a clear, warming broth with tender tofu and mushrooms, accented by the bright scallions, representing a harmonious balance of gentle umami tastes. It works well as a starter or light accompaniment to meals that benefit from a soothing broth-based soup.
Ingredients
- 6 cups water or dashi or vegetable stock
- 4 Tbsp miso paste
- 1 cup firm tofu cut in small cubes (use more if you like
- 2 cups mushroom assorted, sliced
- 4 scallions sliced thin, use all of white and some green
Instructions
- Heat the stock and water to a simmer and add the mushrooms and tofu. Simmer for a couple of minutes to cook the mushrooms.
- When you're ready to serve, add the scallions and take the pan off the heat.
- In a small bowl, whisk the miso with 1/4 cup of the hot broth to form a paste. Stir it back into the broth, and serve.
