Description
Miso Tahini Green Beans starts by trimming and blanching fresh green beans for a short 1-2 minutes to retain a bright green color and crunchy texture. After shocking the beans in ice water to stop cooking, they are patted dry. A sauce made from white miso paste and Chinese sesame paste or tahini is thinned with hot water to a pourable consistency.
Garlic is lightly sautéed in sesame oil to release fragrance, then the beans are tossed briefly in the pan to coat with the garlic oil. The warm miso-tahini sauce is drizzled over the beans and mixed gently before optionally sprinkling with sesame seeds. The result combines nutty, umami-rich flavors with fresh, crisp beans and mild garlic warmth.
This dish works well as a side or light vegetable accompaniment and can be enjoyed at room temperature or slightly warm. The balance of creamy tahini and savory miso enhances the green beans without overpowering their natural taste.
Ingredients
- 1 lb Green bean trimmed and washed, fresh
- 1 teaspoon White miso paste
- 2 tablespoon Chinese sesame paste or tahini
- 3-4 tablespoon water or more depending on the consistency, hot, to thin out
- 1 teaspoon sesame oil
- 2 teaspoon garlic minced
Garnish:
- 1 teaspoon sesame seeds optional
Instructions
- Wash and trim the green beans.
- Bring a large pot of water up to a boil.
- Add the trimmed beans into the water and cook for 1-2 minutes.
- Drain the hot water from the beans and place the beans into an ice water bath.
- When the beans are no longer warm, remove the beans and drain well, patting dry with paper towel.
- In a small bowl, combine white miso paste, Chinese sesame paste (or tahini) and mix well. Add in a few tablespoons of hot water to thin out the mixture. Set aside.
- In a frying pan over medium heat, add in 1 teaspoon of sesame oil and minced garlic.
- Sauté the garlic for about 1 minute, until slightly fragrant.
- Add in the green beans and lightly toss to coat.
- Remove from heat.
- Drizzle the sesame miso sauce over the beans, toss lightly, sprinkle with sesame seeds (if using) and serve.
