Mississippi Pot Roast
Description
This recipe uses a 3-pound chuck roast seasoned with packets of ranch dressing mix and au jus mix, topped with butter and pepperoncini peppers that add subtle spice and tang. The roast is placed in a slow cooker liner with pepperoncini brine, sealed, and cooked on low for eight hours until fall-apart tender.
The slow cooking melts the butter into the sauce, enriching the beef juices and spices, while the pepperoncini provide brightness and gentle heat. After cooking, shredding the meat in the mixture integrates flavors throughout.
This pot roast pairs well with mashed potatoes, rice, or crusty bread to soak up the sauce, suitable for an easy family dinner or casual gathering.
The roast can be prepared ahead by sealing in the slow cooker liner and freezing for up to three months, making it convenient for meal planning.
Ingredients
- 3 pounds chuck roast
- 1 packet Ranch dressing mix
- 1 packet au jus mix
- 6 tablespoons butter
- 6-8 Pepperoncini pickled hot peppers
Instructions
- Place the roast in a slow cooker liner.
- Sprinkle over the ranch mix and the au jus mix.
- Place pats of the butter, and the Peperoncino over the roast.
- Pour in 1/2 cup (or more) Peperoncino brine. (At this point, you can tightly close the liner, and freeze for up to 3 months.)
- Place the liner in a slow cooker, and open up the liner to fit over the edges.
- Cook on LOW for 8 hours.
- When the roast is falling-apart tender, shred it with two forks in the sauce. Serve.
