Description

Using fresh berries like blueberries and raspberries works well, but any fresh berries can be substituted. Ingredients
- 2 cups rolled oats
- ½ teaspoon kosher salt
- 1/3 cup coconut sugar cane sugar, or brown sugar
- 2 egg large
- 1 (14-oz) can coconut milk full-fat
- 1 tsp vanilla extract optional, pure
- 2 cups mixed berries fresh
- ½ honeycrisp apple peeled and finely chopped
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a 9" x 9" baking pan with parchment paper. Note: you can also lightly spray the baking pan with cooking oil if you don't have parchment paper.
- In a large bowl, whisk together the eggs, coconut milk, and vanilla extract (the wet ingredients).
- Stir the remaining dry ingredients into the egg mixture until everything is well combined. This oat mixture will be very wet - this is normal.
- Transfer the oatmeal mixture to the baking pan and bake on the center rack of the preheated oven for 45 to 55 minutes, or until the baked oatmeal has set up and is lightly golden-brown. Note: If you use a different milk other than full-fat coconut milk, the oatmeal may require less time to bake due to the lower fat content. For instance, if using a lower fat non-dairy milk, bake for 35 minutes then continue checking on the oatmeal until it's ready. Baked oatmeal is fully cooked when it reaches an internal temperature of 190 degrees Fahrenheit or higher. You can test the temperature by inserting a digital thermometer into the center of the oatmeal bake.
- Allow the baked oatmeal to cool for at least 20 minutes before slicing it into individual portions and serving. Serve with your choice of fresh fruit, Greek yogurt, whipped cream, etc.
