Mixed Berry Fruit Punch

Mixed Berry Fruit Punch blends frozen strawberries, blueberries, and raspberries with fresh ginger paste and mint leaves, pureed with lemon-lime soda for a refreshing, vibrant drink. The bubbly soda adds lightness while the fresh ingredients provide bright, fruity flavors with a hint of spice from ginger and herbal notes from mint. This punch is naturally chilled and can be topped with extra soda for effervescence just before serving.

Description

The Mixed Berry Fruit Punch recipe uses a combination of frozen mixed berries including strawberries, blueberries, and raspberries. These berries are blended with freshly grated ginger paste and fresh mint leaves to create a smooth, flavorful berry puree. Lemon-lime soda provides a crisp, sweet base with carbonation that balances the natural tartness of berries and the warm spiciness of ginger. The blending breaks down the berries for a smooth texture, while leaving the soda’s bubbles mostly intact. The punch is assembled by pureeing a portion of the soda with berries and herbs, then folding in the remaining soda for freshness and fizz.

The punch is served cold and can be poured over ice, with extra soda added to each glass to top it off for a lively, fizzy finish. Its vibrant red shade and layered flavors make it suitable for warm weather or gatherings where a fruity, alcohol-free beverage is desired.

The recipe yields 11-12 eight-ounce servings, making it practical for larger groups. If your pitcher isn’t large enough, dividing the punch between two pitchers is recommended to accommodate volume evenly.

Ingredients

Servings
  • 2 liters lemon-lime soda divided, cold, like 7-UP
  • 24 oz mixed berries I like to use strawberries, blueberries and raspberries, frozen
  • 2-3 tsp ginger fresh paste
  • 5 fresh mint leaves
  • lemon-lime soda extra, optional for topping off glasses

Instructions

  1. To a blender, add 2 cups of the lemon lime soda. Add frozen berries, ginger and mint leaves. Blend until pureed. If necessary, add a bit of extra lemon lime soda to blend smoothly.
  2. Transfer berry puree to a tall pitcher. Pour remaining lemon lime soda in slowly, then stir until combined.
  3. Serve immediately, with additional soda added to each serving glass to top it off, if desired.

Notes

  • This recipe makes enough to serve 11-12 people with 8-ounce servings.
  • If your pitcher isn’t large enough, divide the berry puree and lemon-lime soda evenly between two pitchers for easier mixing and serving.
