Mixed Berry Oatmeal Muffins

These muffins blend rolled oats, plant-based protein powder, and baking agents with applesauce, almond milk, egg whites, peanut butter, and vanilla to form a moist batter. Fresh blueberries, strawberries, and blackberries add bursts of fruit flavor and texture. Baking produces jumbo muffins with slightly browned tops and tender crumb.

Description

The Mixed Berry Oatmeal Muffins incorporate oat flakes and vegan protein powder to provide hearty texture and additional nutrition. Baking powder, baking soda, and cinnamon add leavening and subtle spice. Wet ingredients like applesauce, almond milk, egg whites, peanut butter, and vanilla bind the dry mix and enhance moisture and flavor.

Folding in blueberries, chopped strawberries, and blackberries distributes fresh fruit evenly, resulting in muffins that are fruity and tender with occasional juicy berry bites. Baking in jumbo silicone cups allows for even heat distribution and easy release.

You can substitute whey protein powder for plant-based by adjusting the almond milk quantity slightly. These muffins are suitable for breakfast or an energy-boosting snack and can be logged in nutrition tracking apps for convenience.
