  • 1 cup dried apricot
  • 1 cup dried cranberries
  • 1/2 cup pumpkin seeds
  • 3/4 cup coconut divided, shredded
  • 1/4 teaspoon ground cinnamon
  • 1 pinch salt

Instructions

  1. Add the almonds and apricots into the food processor and blend until it forms a course crumb.
  2. Add in the cranberries, pumpkin seeds, half a cup coconut, cinnamon, and salt in and blend until it forms a fine crumb.
  3. Use your hands to break off pieces and roll them into balls.
  4. Roll the balls in the coconut to coat them.
