  • 1 cup mixed grain ( I used 1/4 cup of quinoa, 1/4 cup of faro, 1/4 cup of millet, 1/4 cup of whole wheat bulgur)
  • 2 cups water 2 1/4 cups
  • 1/4 teaspoon salt
  • 1 cup kale chopped, fresh
  • 2 scallions finely chopped, large
  • 1/3 cup mint chopped fresh
  • 1/4 cup parsley fresh
  • 1/3 cup Cranberry
  • 1/4 cup pecan chopped
  • 1/3 cup pomegranate arils
  • For the dressing:
  • 1/4 cup clementine juice
  • clementine 1/2 tablespoon, zest of 1 large
  • 1 teaspoon lemon juice
  • 1/2 tablespoon orange marmalade
  • 1 teaspoon mustard
  • 1/8 teaspoon salt
  • black pepper pinch
  • 1/4 cup olive oil
