Mixed green salad with berries
Description
Mixed green salad with berries features a variety of leafy greens paired with fresh strawberries, blueberries, raspberries, and chopped apple for fruity brightness. Diced red onion adds a sharp contrast, while candied pecans contribute a sweet crunch. Crumbled feta introduces a salty, creamy component. The salad is dressed with a creamy poppy seed dressing blended from strawberry yogurt, mayonnaise, sugar, apple cider vinegar, and poppy seeds, giving it a rich and tangy profile. The dressing can be adjusted for sweetness and acidity to suit taste.
The fresh ingredients provide a mix of textures, from crisp greens and apples to soft berries, all coated lightly with the creamy dressing. Preparing the salad just before serving preserves the integrity of delicate berries and greens. The candied pecans add a pleasant crunch and sweetness that balances the tartness of the berries and the sharpness of the onion and feta.
This salad works well as a refreshing starter or side for meals in warmer weather. It pairs nicely with grilled chicken or fish if a protein addition is desired. The unique blend of ingredients creates a layered taste experience that highlights the berries amid a hearty salad base.
Ingredients
- 10 cups mixed greens lettuce (red lettuce, romaine, spinach, or whatever you like)
- 1/2 cup strawberry sliced, fresh
- 1/2 cup blueberries fresh
- 1/2 cup raspberries fresh
- 1/4 cup red onion , diced
- 1 apple chopped, sweet variety
- 1 cup pecans candied
- 1/3 cup feta cheese crumbled
Creamy Poppy Seed Dressing:
- 5.3 ounces strawberry yogurt in container
- 1/3 cup mayonnaise
- 1 small piece red onion
- 2 Tablespoons milk
- 2 Tablespoons granulated sugar
- 3 Tablespoons apple cider vinegar
- 1 Tablespoon poppy seeds
Instructions
- Add all of the dressing ingredients to a blender and blend until smooth.
- Taste. Add additional vinegar if you want it tangier, more sugar if you like it sweeter, or a dab more mayo and splash of milk if you want it creamier.
- Stir in poppy seeds. Store dressing in the fridge for up to 2 weeks.
- Make candied pecans.
- Prepare, wash and dry berries, and chop the apple and onion. Add greens to a large mixing bowl. Add toppings (I like to set aside a spoonful of each topping to add at the end, for aesthetics.)
- Toss the mixture in desired amount of dressing. Serve immediately.
