Ingredients
- 1 medium red onion diced
- 1 tablespoon olive oil
- 2 teaspoons Cajun Seasoning
- one 5 ounce package of Kale/Chard/Spinach greens
- 4 large eggs poached to desired doneness
- 2 tablespoons Asiago/Parmesan Shredded Cheese Mix
- to taste salt and pepper

Instructions
- Heat the oil in a large skillet. Add the onions and the Cajun seasoning. Cook until soft.
- Add the greens and cook until wilted.
- Divide between two bowls.
- Divide the cheese between the two bowls and place two poached eggs on top.
- Salt and pepper to taste.
